Creamy Tortellini Soup

    Turn the Instant Pot on to the saute function, on the highest setting. Heat olive oil in the bottom of the pot.

    Add in yellow onion and stir for a couple of minutes. Add in garlic and stir until the onions are translucent, another couple of minutes.

    Add in basil , chicken broth , petite diced tomatoes (with juices), chicken thighs or chicken sausage links , salt and pepper to taste. Give a quick stir.

    Pressure cook for ⏱️ 15 minutes on high pressure. Quick release pressure (or let it release naturally).

    Shred the chicken or cut the chicken sausage into bite size pieces and then add it back into the pot. Stir in frozen cheese tortellini and frozen spinach and Parmesan cheese .

    Turn the Instant Pot to saute to heat up the tortellini quickly. Add milk or half and half and warm through.

    If the chicken is already cooked, skip the 15 minutes of pressure and just put everything in a pot until it's warmed through.
